Step 1:
Combine the sugar and margarine in a mixing bowl until it becomes like cream.
Step 2:
Sift in the flour, baking powder, salt, xanthan gum and cocoa. Use your fingers to incorporate the flour into the wet ingredients.
Step 3:
Add a tbsp almond milk and the chocolate chips (or pieces) and mix into the dough.
Step 4:
Using your floured hands, make small balls and place on a greased cookie sheet. Leave space, as the dough will spread as it bakes.
Step 5:
Bake in the oven at 190 C (375 F) for ten minutes than allow to cool on the tray before transferring to a wire rack.
Step 6:
Get ready to bite into one of the tastiest chocolate chip cookies. And it is completely gluten free, too.
