Baked Citrus Chili Cod

Here is a delicious and healthy, low calorie cod recipe with a great taste, too.

  Total Time: 90 Min 

  Yield: Serves 4

Ingredients:

For the Marinade

  • 2 tablespoons plain non-fat yogurt
  • 1 tablespoon finely chopped ginger
  • 1 tablespoon finely chopped garlic
  • 2 tablespoons Kashmiri curry paste
  • 2 tomatoes - finely chopped
  • 1 teaspoon soy sauce
  • 1 teaspoon white vinegar
  • 1½ teaspoons Cape Crystal citric acid powder


  • 2 eggs, beaten
  • 1 tablespoon mild chili powder
  • 2 tablespoons ground coriander
  • 2 tablespoons ground cumin
  • 1 teaspoon ground turmeric
  • Salt and pepper to taste

 

For the Cod

  • 4 x 200g thick cod fillets
  • 2 teaspoons canola oil
  • 1 lemon, cut into wedges

How to Make It:

Step 1:

 

Place all of the marinade ingredients in a blender and blend until nice and smooth.

Step 2:

 

Place the fish in the marinade and allow to marinate for 30 minutes. While the fish is marinating, preheat oven to 200 C (400 F)

Step 3:

 

Coat baking pan with oil and spread it out evenly with your fingers.

Step 4:


Place the marinade coated fish on the oiled tray and bake for 30 minutes or until nice and brown.

Step 5:

 

Place the cod heated plates and serve over broccoli with one or more of your favorite chutneys or just lemon wedges.
