Gluten Free Lemon Pie 

Gluten-free never tasted so scrumptious with this easy-to-bake lemon pie.

  Yield: Serves 4-6



  • Eggs -2 each
  • Butter – 120 gr (4,2 oz) ½ cup
  • Sugar -120 gr ( 4,2 oz) 2/3 cup
  • Rice flour – 120 gr( 4,2 oz) 1 cup
  • Lemon -1 each
  • Vanilla – 1 tsp
  • Baking soda - 1/2 tsp
  • Cape Crystal Xanthan gum – 1 tsp

Lemon pie is a very simple and fast dessert. It is made from the most common ingredients that everyone has in the refrigerator.There is good news for people with gluten intolerance, you can make it with any flour other than wheat by adding one magic ingredient- xanthan gum. Bake two of these tasty lemon pies as your loved ones are certain to want seconds.

How to Make It:

Step 1:


Separate the yolks from the whites (separate carefully, make sure that the white does not combine with the yolk). You'll need the egg whites later.

Step 2:

Start whipping soft butter with the sugar and vanilla (whisk until the mixture becomes light and luscious looking). Then add the yolks and mix until smooth.

Step 3:


Add yolks to the whipped butter, vanilla and sugar and, again mix until smooth.

Step 4:

Take one lemon and remove lemon zest and squeeze out the lemon juice. (Be careful to remove only the yellow part of the zest, the white part is bitter).

Step 5:


Add the zest and the juice into the bowl of your mixture.

Step 6:


Combine the rice flour, baking soda and xanthan gum. Sift and add into the dough mixture. Mix until smooth.

Step 7:


Whisk the two egg whites until thick peaks and fold into the dough.

Step 8:

Prepare a baking pan. Line it with baking paper (I use a form of 16 cm) Bake in the oven preheated to 180 C for 45 minutes. Let it cool. Serve plain or topped with powdered sugar as shown in the photo. Now stand back and watch it disappear in front of your eyes.
