Cotton Candy Frosted Cookies

High protein, high fiber cookies with casein frosting and sprinkles for a tasty colorful touch

  Total Time: 30 Min 

  Yield: Serves 6

Ingredients:

Cookies:

  • 1/4 cup coconut flour
  • 2 tablespoons wheat flour
  • 1/4 cup Greek yogurt
  • 1 tablespoon melted smart balance/butter
  • 1 teaspoon vanilla extract
  • 1/4 cup egg whites
  • stevia/sweetener

Frosting:

How to Make It:

Step 1:

 

Mix ingredients for the cookies adding water/milk as needed to form a thick pancake consistency batter.

Step 2:

 

Two options: either bake them in a whoopee pie tray until just baked through or microwave (2-minuntes) one at a time in a small dish with raised edges.

Step 3:

 

Place the ingredients for the frosting in large bowl and with an electric mixer beat until stiff peaks form while slowly adding water as needed.

Step 4:

 

Spread on top of the cookies. Add sprinkles.

Step 5:

 

Place the frosted cookies in the freezer for about 10-20 minutes before serving.
